Today is day one of my annual two day Christmas Cookie Baking Extravaganza. Every year I spend about two days solid baking Christmas cookies to hand out to friends, family, and neighbors. This year I am taking out one of my more tedious cookies and adding in two new cookies that are easier to make and sound delicious. The first is a simple yet very elegant looking Vanilla Bean Sugar cookie made with real vanilla bean paste, a new ingredient I am testing out this year. The second is a Raspberry Lemon cookie made with lemons grown from my neighbors tree, and fresh raspberries. The recipe says the raspberry cookie is a mess to make, but looks beautiful. If they turn out I will post the recipes with pictures. My goal is to have them all finished my Friday night, handed out on Saturday, and me resting on the couch eating fresh baked cookies by Sunday.
